Paula Aston's Oat Squares

Paula Aston's Oat Squares
Ingredients:
2 cups uncooked oatmeal put through a food processor                                                                             
1 Tablespoon baking powder (use aluminum-free)
1/2 tsp  sea salt
1/3 cup sugar or less (raw or brown is nice) (or molasses, less !)
1 cup buttermilk (or any fave nutmilk -  I generally make this recipe with almond milk)
2 large eggs
½ stick butter, melted  (or coconut oil)
1 cup (more or less) of your favorite fruit (pureed strawberries or 3 mashed-up bananas are my personal faves)
(You can also add peanut butter, pumpkin puree, pretty much anything to change up the flavor from batch to batch.)

Instructions:
Preheat oven to 375.
Butter 9X12 rectangular baking dish
Mix dry ingredients and wet ingredients separately, then add dry ingredients to wet.
Pour oat muffin mixture into pan
Bake 20-30 minutes, until knife comes out clean.
Served warm or cold these make a delicious breakfast or snack!
