Memere's Bran Bread

12 oz bran cereal
5 cups flour (600g)
2.5 cups white sugar (496g)
5 teaspoons baking soda
4 beaten eggs
1 cup of oil
1 quart of buttermilk

  • Preheat over to 350
  • Put cereal in milk in a bowl.Allow to soften
  • In a separate bowl, mix the flour, sugar, and baking soda
  • In a separate bowl, mix the beaten eggs with the oil
  • Once cereal is soft, mix 3 bowls together 
  • Grease and flour 4 bread pans
  • Evenly divide mix into the 4 pans
  • Cook for 40/45 minutes, check at 35 minutes
  • Cool completely on cooling rack
* Need to try with adding raisins.

Banana bread

3 very ripe bananas, peeled
1/3 cup melted butter
2/3 cup of sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

Preheat the oven to 350°F (175°C), and butter/crisco and flour a loaf pan

In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.

Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.

Pour the batter into your prepared loaf pan. Bake for 1 hour to 1 hour 10 minutes (check at 50 minutes) at 350°F, or until a tester inserted into the center comes out clean.

Remove from oven and cool completely on a rack. Remove the banana bread from the pan. Slice and serve.

Banana Applesauce cookies

Recipe #1

3 mashed bananas (ripe)
1/3 cup apple sauce
2 cups oats
1/4 almond milk
1/2 cup raisons (optional)
1 tsp vanilla
1 tsp cinnamon

Can add: cranberries instead of raisins, coconut, nuts
350 for 15-20

Recipe #2
Ingredients

    1 1/2 cups oatmeal, quick or old fashioned ~ uncooked
    2 ripe bananas, mashed with fork until creamy  **(see update below)
    1 cup unsweetened applesauce
    1/3 cup raisins, or to taste ((optional ~ you can add in some dried cranberries (replacing some of the raisins) if you include the use of dried cranberries in your diet.  Trader Joe's makes a really good one.))
    1/4 cup chopped walnuts, toasted (or regular, if you prefer) ***(see update below)
    1 tsp vanilla extract
    1 tsp cinnamon (or more, to taste)


Directions

Preheat heat oven to 350 degrees.

Mix vanilla extract & cinnamon into the applesauce.

Blend applesauce mixture with all other ingredients & let sit for 10 minutes

Drop cookie dough, by spoonfuls, onto a parchment paper lined cookie sheet & flatten cookies into rounds.

Bake approx. 20 - 30 minutes, or until golden & done.

Remove from oven & let rest on cookie sheet for 5 minutes, then move to cooling rack.

Store in a covered container when completely cool.

Enjoy for breakfast, for an afternoon snack with tea/coffee or just about any time!

Fruit dip

Ingredients

    * 2 (3 ounce) packages instant vanilla pudding mix
    * 1 cup milk
    * 1/2 cup amaretto liqueur
    * 1 (16 ounce) container frozen whipped topping, thawed

Directions

   1. In a medium bowl, mix together the vanilla pudding mix, milk and amaretto liqueur. Beat in the thawed frozen whipped topping. Chill 1 hour in the refrigerator before serving.

Paula Aston's Oat Squares

Paula Aston's Oat Squares
Ingredients:
2 cups uncooked oatmeal put through a food processor                                                                             
1 Tablespoon baking powder (use aluminum-free)
1/2 tsp  sea salt
1/3 cup sugar or less (raw or brown is nice) (or molasses, less !)
1 cup buttermilk (or any fave nutmilk -  I generally make this recipe with almond milk)
2 large eggs
½ stick butter, melted  (or coconut oil)
1 cup (more or less) of your favorite fruit (pureed strawberries or 3 mashed-up bananas are my personal faves)
(You can also add peanut butter, pumpkin puree, pretty much anything to change up the flavor from batch to batch.)

Instructions:
Preheat oven to 375.
Butter 9X12 rectangular baking dish
Mix dry ingredients and wet ingredients separately, then add dry ingredients to wet.
Pour oat muffin mixture into pan
Bake 20-30 minutes, until knife comes out clean.
Served warm or cold these make a delicious breakfast or snack!

Coconut balls

Dark Chocolate Coconut Protein Balls

Ingredients

1/4 cup chia seeds
4 Tbsp. almond butter
3 Tbsp. protein powder (I used vanilla)
3 Tbsp. dark cocoa powder (or cacao powder to keep it raw)
1/8 tsp. sea salt
1 Tbsp. honey or agave nectar
1 Tbsp. coconut oil (melted, but not hot)
1/4 cup unsweetened shredded coconut
1/2 tsp. vanilla extract
Additional 1/4 cup unsweetened shredded coconut for rolling

Preparation:

Mix all ingredients together, either by hand or in the food processor. Roll the dough into 1-1/2″ balls and then roll each ball in shredded coconut. Pop in the refrigerator to set up. These will keep covered in a Tupperware in the refrigerator for up to a week, but I doubt they will last that long. Enjoy!
