Memere's Bran Bread

12 oz bran cereal
5 cups flour (600g)
2.5 cups white sugar (496g)
5 teaspoons baking soda
4 beaten eggs
1 cup of oil
1 quart of buttermilk

  • Preheat over to 350
  • Put cereal in milk in a bowl.Allow to soften
  • In a separate bowl, mix the flour, sugar, and baking soda
  • In a separate bowl, mix the beaten eggs with the oil
  • Once cereal is soft, mix 3 bowls together 
  • Grease and flour 4 bread pans
  • Evenly divide mix into the 4 pans
  • Cook for 40/45 minutes, check at 35 minutes
  • Cool completely on cooling rack
* Need to try with adding raisins.

Banana bread

3 very ripe bananas, peeled
1/3 cup melted butter
2/3 cup of sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

Preheat the oven to 350°F (175°C), and butter/crisco and flour a loaf pan

In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.

Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.

Pour the batter into your prepared loaf pan. Bake for 1 hour to 1 hour 10 minutes (check at 50 minutes) at 350°F, or until a tester inserted into the center comes out clean.

Remove from oven and cool completely on a rack. Remove the banana bread from the pan. Slice and serve.

Turkey Barley soup

8 cups turkey broth  ** homemade is best
1.5 cups diced celery  ** about 2.5 large celery stalks
3/4 cup medium pearl barley  ** Original recipe said full cup
1 medium onion, diced
3/4 cup diced carrots  ** about 2 medium carrot
1/4 teaspoon salt
1/2 teaspoon dried thyme
1 bay leaf  ** I used bay leaf flecks
1/8 teaspoon ground allspice
1/8 teaspoon pepper
2 cups cubed cooked turkey
1 cup frozen small peas  ** Not in original recipe


Combine everything except turkey in large pan. Bring to a boil. Reduce heat; simmer, uncovered, for 30-40 minutes or until vegetables and barley are tender. 
Add turkey and frozen peas. Turn heat to low for 10 minutes.

Beef & Barley soup (mom's)

Beef & Barley soup (mom's)

1.5/1.75 chuck steak with bone  (1740/2030 calories)
0.75 lbs turnip (1/4 of a small one) - Cut up into half the size of a cube of sugar  (26 calories)
0.4 lbs onion (~2 small) - Cut up ~ half the size of stir fry size
1/2 cup pearl barley
2 cups cabbage (1/4 a small one) - Shaved then cut in half like making cole slaw
0.5 lbs carrots - Cut up into stew size bites
0.5 lbs green beans - Cut up into stew size bites
2 stalks celery - Cut up a little smaller than stew size bites
16 oz beef broth - low/no sodium. This can be replaced with water + bouillon cubes


- Wash meat and cut into thirds. Add to deep pan, adding water to cover meat
- Put on stove on high. Once boiling, cover and turn to low. Cook for 1-1.5 hrs
- Add turnip. Cook for 0.5-1 hours
- Add onion. Cook for 0.5 hours
- Take out meat and put aside to cool
- Add barley. Put temp back to high
- Add cabbage, carrots, beans.
- Once boiling, turn down temp to med/low
- Cook for 20-25 minutes. Check barley, add time if needed
- Shred beef with hands.
- Once barley is cooked, add celery and meat.
- Add broth enough to cover everything in liquid.
- Turn temp to high, cover.
- Once boiling, turn to medium and cook for 10 minutes.
- Taste. Add more broth or salt if needed

* This recipe is 1/2 of the original recipe, which is approximately 6 servings.
** This can be a time consuming meal, as the cook time is a minimum of 3 hours. All of the food prep can be done while the meat is cooking.

** Made without onion, and quinoa instead of barley. Onion made no difference, slight taste change due to the lack of barley. Needed a little salt instead.
** Calorie count for double ingredients, no onion, and quinoa instead of barley - ~5200. Meat accounted for 76% and the quinoa was 12%. Better cut of meat cuts down on calories but also affects stock.

Chicken and Rice Soup

Chicken and Rice Soup
Ingredients:
1 tablespoon extra-virgin olive oil
1 medium onion, chopped
2 garlic cloves, minced
2 medium carrots, cut diagonally into 1/2-inch-thick slices
2 celery ribs, halved lengthwise, and cut into 1/2-inch-thick slices
4 fresh thyme sprigs
1 bay leaf
2 quarts chicken stock or broth (we use low sodium)
1 cup of water
1 cup long grain white rice
1 1/2 cups shredded cooked chicken breasts
Kosher salt and freshly ground black pepper

Directions:
Place a soup pot over medium heat and add the olive oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes, until the vegetables are softened but not browned. Pour in the chicken broth and water- bring the liquid to a boil. Add in the rice and chicken; season with salt and pepper. Cook on medium-low until the rice is tender-about 30 minutes. Serve hot.

*Note-for the shredded chicken I used 2 large chicken breasts. I boiled a pot of water on the stove and added in the chicken-which I cut into large pieces. Boil the chicken until it is cooked all the way through and there is no pink left. This will take about 7 minutes or so. Drain the water and shred the chicken once it is cooled. I use 2 forks to shred the chicken. *

Guacamole

The ingredients below are per Avocado


1/4 teaspoon salt
2 tablespoons salsa
1 clove garlic
1/2 teaspoon lime juice
Small amount chopped red onion

Cut up garlic into smallish pieces.
Add garlic and salt to pestle. Mash up
Cut up avocado, add to bowl
Add salsa and garlic/salt to bowl
Mash together
Taste. If you can't taste the avocado much, add a bit of salt. If it's a little flat, dribble a little juice in. If it's not spicy enough, add a little salsa. Try more garlic to see how that changes it.
Add red onion and mix up


To avoid browning
- Add to a bowl.
- Compress to get out any large air pockets
- Cover with 1/2 inch of water.
- Cover and put in fridge
- Prior to serving, remove from fridge and drain water
- Mix up and serve.

Honey mustard Turkey Tips

Defrost and cut up Turkey tenderloin
Cover in a mixture of olive oil and italian dressing. Not a lot of Italian
Sautee in honey mustard dipping sauce and honey mustard dressing. Cook for short time, until lightly browned
Finish in oven, ~15-20 minutes

Turkey barley soup

2 quarts (8 cups) water
1 32oz container organic low or salt chicken broth
1/2 teaspoon pepper
1/4 teaspoon poultry seasoning or dried sage leaves
    * I used poultry seasoning
1 dried bay leaf
1/2 cup uncooked pearl barley
    * In the future I would use 1 cup
3 medium carrots, sliced (1 1/2 cups)
1 large onion, chopped (1 cup)
    * I cup too much and put in 1.75 cups
2 medium stalks celery, sliced (1 cup)
    * I cut too much and used 1.5 cups
3 cups cut-up cooked turkey
2 tablespoons chopped fresh parsley, if desired
    * I did not use

    * The night before, I baked a 6.5 pound turkey breast
    1) Break up turkey carcass to fit 6-quart Dutch oven. Add water, broth, pepper, poultry seasoning and bay leaf. Heat to boiling over high heat; reduce heat to low. Cover; simmer 1 hour 30 minutes.
    2) Skim off any residue that rises to the surface. Remove bones, meat and bay leaf from broth; cool. When cool enough to handle, remove meat from bones and cut into bite-size pieces; set aside. Discard bones and bay leaf.
        * I ended up picking out 2 cups of meat from making the broth
    3) Skim fat from broth; discard. Add turkey meat cut from bones to broth; stir in barley. Heat to boiling; reduce heat to low. Cover; simmer 30 minutes, stirring occasionally.
    4) Stir in carrots, onion, celery and 3 cups cooked turkey. Simmer uncovered 20 to 25 minutes longer, stirring occasionally, until vegetables and barley are tender. Stir in parsley.
        * I ended up cooking this for an additional 25 minutes

Chicken & Wild Rice soup

1 cut up medium onion, 1.5-2 cups
3 cut up stalks of celery
3 cut up carrots
1 cup cut up spinach
2 minced garlic cloves
1 tablespoon olive oil
1/2 teaspoon tarragon
1/4 teaspoon thyme

1/4 teaspoon pepper
4 cups chicken broth (Home made, no salt added)
3 cups shredded chicken (Home made, baked with nothing added) (1 pound boneless/skinless = 3 cups)
6 ounce box of Uncle Ben’s Original Recipe Long Grain and Wild Rice
1-2 cups water *optional

1) Cook rice according to directions on the box, excluding butter. Takes 20-30 minutes.
2) Saute olive oil, onion, celery, and garlic until tender.
3) Turn heat down to medium low and add the spinach continue to saute for 1 minute.
4) After spinach has wilted add seasoning's. Combine for a minute over heat, turn heat off and set aside.
5) Combine sauteed vegetables, carrots, chicken, chicken broth, and water (optional) in a pot.
6) When rice is done, add rice to pot.
7) Simmer 20 minutes, or until carrots are tender.

Banana Applesauce cookies

Recipe #1

3 mashed bananas (ripe)
1/3 cup apple sauce
2 cups oats
1/4 almond milk
1/2 cup raisons (optional)
1 tsp vanilla
1 tsp cinnamon

Can add: cranberries instead of raisins, coconut, nuts
350 for 15-20

Recipe #2
Ingredients

    1 1/2 cups oatmeal, quick or old fashioned ~ uncooked
    2 ripe bananas, mashed with fork until creamy  **(see update below)
    1 cup unsweetened applesauce
    1/3 cup raisins, or to taste ((optional ~ you can add in some dried cranberries (replacing some of the raisins) if you include the use of dried cranberries in your diet.  Trader Joe's makes a really good one.))
    1/4 cup chopped walnuts, toasted (or regular, if you prefer) ***(see update below)
    1 tsp vanilla extract
    1 tsp cinnamon (or more, to taste)


Directions

Preheat heat oven to 350 degrees.

Mix vanilla extract & cinnamon into the applesauce.

Blend applesauce mixture with all other ingredients & let sit for 10 minutes

Drop cookie dough, by spoonfuls, onto a parchment paper lined cookie sheet & flatten cookies into rounds.

Bake approx. 20 - 30 minutes, or until golden & done.

Remove from oven & let rest on cookie sheet for 5 minutes, then move to cooling rack.

Store in a covered container when completely cool.

Enjoy for breakfast, for an afternoon snack with tea/coffee or just about any time!

Fruit dip

Ingredients

    * 2 (3 ounce) packages instant vanilla pudding mix
    * 1 cup milk
    * 1/2 cup amaretto liqueur
    * 1 (16 ounce) container frozen whipped topping, thawed

Directions

   1. In a medium bowl, mix together the vanilla pudding mix, milk and amaretto liqueur. Beat in the thawed frozen whipped topping. Chill 1 hour in the refrigerator before serving.

Paula Aston's Oat Squares

Paula Aston's Oat Squares
Ingredients:
2 cups uncooked oatmeal put through a food processor                                                                             
1 Tablespoon baking powder (use aluminum-free)
1/2 tsp  sea salt
1/3 cup sugar or less (raw or brown is nice) (or molasses, less !)
1 cup buttermilk (or any fave nutmilk -  I generally make this recipe with almond milk)
2 large eggs
½ stick butter, melted  (or coconut oil)
1 cup (more or less) of your favorite fruit (pureed strawberries or 3 mashed-up bananas are my personal faves)
(You can also add peanut butter, pumpkin puree, pretty much anything to change up the flavor from batch to batch.)

Instructions:
Preheat oven to 375.
Butter 9X12 rectangular baking dish
Mix dry ingredients and wet ingredients separately, then add dry ingredients to wet.
Pour oat muffin mixture into pan
Bake 20-30 minutes, until knife comes out clean.
Served warm or cold these make a delicious breakfast or snack!

Coconut balls

Dark Chocolate Coconut Protein Balls

Ingredients

1/4 cup chia seeds
4 Tbsp. almond butter
3 Tbsp. protein powder (I used vanilla)
3 Tbsp. dark cocoa powder (or cacao powder to keep it raw)
1/8 tsp. sea salt
1 Tbsp. honey or agave nectar
1 Tbsp. coconut oil (melted, but not hot)
1/4 cup unsweetened shredded coconut
1/2 tsp. vanilla extract
Additional 1/4 cup unsweetened shredded coconut for rolling

Preparation:

Mix all ingredients together, either by hand or in the food processor. Roll the dough into 1-1/2″ balls and then roll each ball in shredded coconut. Pop in the refrigerator to set up. These will keep covered in a Tupperware in the refrigerator for up to a week, but I doubt they will last that long. Enjoy!

Meatball's & sauce (mom's)

SAUCE

2 cans Hunts Puree - 22 points total
1 can Pastene Ground Peeled Tomatoes - 7 per can * You can add 2 cans
1/2 can water per can - 0 points

SPICES - These measurements are per can of sauce added - 1/4 teaspoon (dried) of each spice, crush in palm before adding
Basil leaves - 0 points
Parsley - 0 points
Mint flakes - 0 points

1 medium onion, chopped - 0 points

4-5 cloves of garlic - (you can add the whole clove and remove later, or chop it up and leave it in) 0 points

Salt - To taste - 0 points
Pepper - To taste - 0 points

Sweet italian sauage links - 1 lb (6-8 links) - 40 points

Kraft Parmesan & Romano cheese - up to 1/4 cup - 8 points

- Pre-heat over to 350 degrees.
- In large pan, mix together: sauce, water, spices, onion, salt, pepper.
- Throw it in the oven, covered.
- Make your meatballs (see below)
- Add meatballs to the top of the sauce, spoon sauce over the meatballs, don't mix up the sauce (meatballs will fall apart)
- Put in over for a while (30-60 minutes)
- Add some grated cheese and mix up the sauce
- Cover, back in over
- Keep an eye/ear on it - Don't let it boil. It will get to the point where it is boiling. At that point, turn the temp down to 275-325, mixing periodically


MEATBALLS

1/2 pound ground pork - 8 points
1.5 pounds ground beef 93% - 22 points
2 eggs - 4 points
1 cup plain bread crumbs - 11 points

SPICES - These measurements are per pound of meat - 1/4 teaspoon (dried) of each spice, crush in palm before adding
Basil leaves - 0 points
Parsley - 0 points
Mint flakes - 0 points


FINELY chop 1 medium onion, set aside in a bowl - 0 points

Kraft Parmesan & Romano cheese - up to 1/16 cup - 2 points

Salt - to taste
Pepper - to taste

1/4 - 1/2 cup of sauce

- In a bowl add all ingredients EXCEPT bread crumbs and onion. Mix slowly with a spoon, and slowly add bread crumbs and onion. Add sauce to the mix. If not dry, add 1/4 cup. If dry, add up to 1/2 cup.
**Don't over mix!!

Fish (mom's)

FISH

Haddock

5-8 ritz crackers
2 tabs butter, melted
lemon

- put crackers in a bag, crush them (use a rolling pin or a can)
- combine crackers crumbs with melted butter
- wash fish, put in baking pan
- squeeze lemon on top
- add crumbs to top
- bake for 12 minutes at 350 degrees uncovered
- if you want crispy crumbs, put back in over with broiler on. Watch carefully




Salmon

- Wash fish, put in baking pan
- pre-heat broiler, broil for 4-5 minutes
- put butter on top of fish
- back in over for 5-6 minutes
- should be 10-12 minutes total


Swordfish

- Wash fish, put in baking pan
- pre-heat broiler, broil for 4-5 minutes
- put butter on top of fish
- back in over for 5-6 minutes
- should be 10-12 minutes total


Shrimp (26-30 count)

5-8 ritz crackers

Hannah's Turkey Stuffed Peppers - Biggest Loser

Hannah's Turkey Stuffed Peppers
Ingredients
Olive oil spray
1/2 cup minced onion
1 teaspoon minced garlic
1.25 pounds of extra-lean ground turkey
Salt to taste
1 teaspoon garlic powder
1/4 cup low-sodium tomato sauce
1 cup fat-free low-sodium chicken broth, divided
1 tablespoon chopped fresh cilantro or parsley
3 large sweet red bell peppers, washed * I prefer to use one red, one yellow, and one orange pepper.
1/4 cup reduced-fat shredded cheddar cheese

Instructions
Pre-heat oven to 400 degrees. Lightly coat a large nonstick skillet with olive oil cooking spray; heat over medium heat. Add onion and garlic to the pan. Sauté about 2 minutes, or until softened. Add extra-lean ground turkey to the pan. Season to taste with salt, then add garlic powder and ground cumin. Break meat apart and cook over medium heat for 14-16 minutes, until well done, 165°F as measured by a meat thermometer. Add 1/4 cup of tomato sauce and 1/2 cup chicken broth to the pan. Reduce heat and simmer over low heat for about 5 minutes. Add chopped fresh cilantro or parsley to the turkey mixture. There will be about 2 cups of turkey mixture.

Cut bell peppers in half lengthwise and remove seeds and stem. Put in baking dish and spoon about 1/3 cup of the turkey mixture into each pepper half. Place all stuffed peppers on a baking dish and pour the rest of the chicken broth in the bottom of the pan. Cover with foil and bake for 35 minutes. When done, sprinkle with cheese before serving.


3 Envelope Roast

3 Envelope Roast
* Great use of an "old" roast that has been in the freezer for a long time. I used this for two medium roasts that had been in the freezer for over a year. Once cooked, we could not tell any difference.

Ingredients:
3 pound beef roast such as chuck roast
1 envelope of dry Italian salad dressing mix
1 envelope of dry ranch salad dressing mix
1 envelope of dry brown gravy mix
2 cups water or more to cover the roast

Instructions :
Put the water in a measuring cup that is larger then the amount of water you are using. Now add and mix all three envelopes of dry salad dressings to the water. Mix until blended completely.
Brown the roast (if desired). Add the meat to your cooker. Pour the water, salad dressing mixture over the roast. In the slow cooker cook it on high for about 4 hours on low about 8 hours.
* I also added onions, carrots, and potatoes to the slow cooker once the meat was about half done.

Potato salad (mom's)

5 pounds potatoes
6 eggs - Hard boiled
1 large vidalia onion - diced
1+ cup - mayo (Demoulas light mayo)
salt
pepper

- peel & quarter potatoes
- Add potatoes to pan and fill with water.
- Put on stove on high.Once it starts boiling, cook at least 30 minutes. Mix at first, after 5-10 minutes stop stirring. Check with fork, should feel like cantaloupe.
- drain. Air cool until you can handle the potato's

(repeat until all ingredients are used)
- Cut up a some of the potato's into a mixing bowl
- cut up some egg
- Add some onion
- Add some mayo
- season with salt & pepper
- mix

- Chill before serving

Zucchini Parmesan Crisps

** I have not made this yet
Zucchini Parmesan Crisps

1 lb. zucchini or squash (about 2 medium-sized)
1/4 cup shredded parmesan (heaping)
1/4 cup Panko breadcrumbs (heaping)
1 tablespoon olive oil
1/4 teaspoon kosher salt
freshly ground pepper, to taste
Preheat oven to 400 degrees. Line two baking sheets with foil and spray lightly with vegetable spray.

Slice zucchini or squash into 1/4 inch-thick rounds. Toss rounds with oil, coating well.

In a wide bowl or plate, combine breadcrumbs, parmesan, salt and pepper.

Place rounds in parmesan-breadcrumb mixture, coating both sides of each round, pressing to adhere. The mixture will not completely cover each round, but provides a light coating on each side.

Place rounds in a single layer on baking sheets. Sprinkle any remaining breadcrumb mixture over the rounds.

Bake for about 22 to 27 minutes, until golden brown. (There is no need to flip them during baking -- they crisp up on both sides as is.)

Lasagna (mom's)

To make 2 Lasagna's

2 throw away foil pans (washed) - 13x9x2.75
3 pounds - Dragone part skim ricotta
2 pounds - Barilla lasagna
2 packages - sliced Mozzarella
3 packages (12 oz) - Shredded mozzarella
Can of Parmesan/Romano cheese
Homemade sauce - 10 cups

* Pre-heat oven to 350 degrees
* Remove cover from Ricotta to let it get to room temperature.
* If spreading Ricotta is difficult, you can nuke it for 10-20 seconds to warm it up
* Can mix Ricotta and sauce to make it even easier to spread

Cook lasagna as directed on box. When done cooking, put cooked lasagna into a bowl of cold/cool water for a minute. Remove and drape over side of colander for a minute. Put paper towels on counter top, and layer cooked lasagna on paper towels.

Cover with one layer of foil. Cook in over for 30 minutes. Take out of oven, cool, and put in refrigerator or freezer. On day of eating, remove from refrigerator or freezer and allow to get close to room temperature. Cook, covered, at 350 for 20-40 minutes. Once it is hot and steaming, remove foil, cover top with sliced Mozzarella. Put back in oven. You can put on broil but you MUST watch it closely as the cheese will burn easily. Remove from oven once cheese is melted.
